Zoom's updated terms of service allow for (not only) AI training on user content. As well as the extremely broad possibilities of using whatever users do and transmit on the platform. 🔀 For now, it looks like you can't even refuse the extra, and the explanations from Zoom's PR team are unhelpful, or better said, quite typical for situations like this.
